
M&M’s cookies are the kind of treats children dream about. At least, that’s what I thought… until I saw the joy in my husband’s eyes ;). They’re always a hit – soft, buttery, with a lovely crunch from the M&M’s. Perfect for an afternoon treat or a party – and definitely not just for kids.
Makes about 45 cookies.
Ingredients for the M&M’s cookies:
- 220 g butter
- ½ cup light soft brown sugar
- ½ cup caster sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2¼ cups plain flour
- ½ teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- a generous pinch of salt
- about 400 g peanut M&M’s
All ingredients should be at room temperature.
Cream the butter and both sugars until pale and fluffy. Add the eggs one at a time, then the vanilla, mixing well after each addition. Add the dry ingredients and mix until just combined. Fold in half of the M&M’s. Chill the dough for 1–2 hours (optional, but helps with shaping).
Shape the dough into balls about the size of a walnut and place on a baking tray lined with baking parchment. Gently flatten (you can also use an ice cream scoop or spoon). Press the remaining M&M’s into the tops of the cookies.
Bake at 180°C for about 10 minutes, or until the edges are lightly golden. Leave to cool on the tray for a few minutes (they will be very soft at first), then transfer to a wire rack to cool completely.
