
These indulgent muffins come from Nigella Lawson’s book How to Be a Domestic Goddess, where they appear in the children’s baking section. Intensely Snickers-like, sweet, and filled with the aroma of peanuts and peanut butter – they’re a dream for any Snickers fan!
Makes 12 muffins.
Ingredients for snickers and peanut butter muffins:
- 250 g plain flour
- 5 tablespoons caster sugar
- 1½ teaspoons baking powder
- a pinch of salt
- 160 g crunchy peanut butter
- 60 g butter, melted
- 1 large egg, beaten
- 175 ml milk
- 3 Snickers bars (65 g each), chopped
All ingredients should be at room temperature.
Sift together the flour, sugar, baking powder, and salt. Add the peanut butter and rub it in with your fingertips until the mixture resembles coarse crumbs. In a separate bowl, mix the milk with the melted and cooled butter and the beaten egg. Combine the wet and dry ingredients, mixing gently with a spatula until just combined. Fold in the chopped Snickers pieces.
Line a standard muffin tin with paper cases and divide the batter evenly between them. Optionally, sprinkle with chopped peanuts.
Bake at 180°C for about 25 minutes. Remove from the oven and cool on a wire rack.
