Izaura chocolate cheesecake muffins

I have a soft spot for chocolate bakes made with curd cheese, so today I’m sharing yet another version of chocolate muffins with a cheesecake filling. Izaura muffins are intensely chocolatey muffins with a vanilla cheese filling, topped with chocolate glaze. They’re delicious, loved by everyone and seriously addictive. Perfect with a glass of milk.

Ingredients for 12 muffins.

Ingredients for the Izaura muffins:

  • 190 g plain flour
  • 50 g cocoa powder
  • 1 tsp instant coffee (optional)
  • 2 tsp baking powder
  • 150 g butter, melted
  • 2 eggs
  • 180 ml milk
  • 100 g light brown sugar
  • 1 tsp vanilla extract
  • 150 g dark chocolate chips or chopped dark chocolate (or semi-sweet chocolate)

All ingredients should be at room temperature.

Place the wet ingredients in a bowl: eggs, milk, vanilla and melted butter. Add the sugar and whisk with a balloon whisk until combined. Sift the dry ingredients directly into the wet mixture: flour, baking powder, coffee and cocoa powder. Whisk just until combined. Add the chocolate chips and stir to combine.

Line a muffin tin with 12 paper cases (the cases should extend above the rim of the muffin tin). Place 1½ heaped tablespoons of the batter into each paper case (you will use more than half of the muffin batter). Then place 2–3 teaspoons of the cheesecake filling (recipe below) in the centre of each muffin, dividing it evenly between the cases. Cover with the remaining chocolate batter.

Bake at 170°C for about 25 minutes or until a skewer inserted into the muffin comes out clean. Remove from the oven and leave to cool.

Drizzle with the chocolate glaze.

Ingredients for the cheesecake filling:

  • 250 g full-fat or semi-fat curd cheese, ground three times
  • 1 egg yolk
  • 3 tbsp sugar
  • 8 g vanillin sugar*

Place all the ingredients in a small bowl and mix thoroughly with a spoon.

Ingredients for the chocolate glaze:

  • 100 g semi-sweet chocolate, chopped
  • 70 ml double cream

Heat the cream in a small saucepan until almost boiling, then remove from the heat. Pour it over the chopped chocolate and leave for 2 minutes. After this time, stir until smooth and glossy.

* You can omit the vanilla sugar and use sugar made with real vanilla instead.

Store the Izaura muffins at room temperature.
