Nigella Lawson’s American Pancakes

Whenever I manage to buy fragrant, beautiful first-of-the-season local strawberries, I immediately want to make pancakes or crêpes to go with them. This time I tried the famous American pancakes recipe by Nigella Lawson — and it did not disappoint. The pancakes are fluffy and delicious, disappearing in no time, while the wonderful aroma of strawberries lingered in the kitchen all afternoon.

Ingredients for the pancakes:

  • 300 ml milk
  • 2 large eggs, lightly beaten
  • 30 g butter, melted and slightly cooled
  • 225 g plain flour
  • 2½ teaspoons baking powder
  • a pinch of salt
  • 1 teaspoon sugar

Nigella simply puts all the ingredients into a bowl and blends them with a blender. If you prefer the traditional method ↓

Place the eggs in a bowl and whisk them well. Add the milk, sugar, salt and melted butter, whisking to combine. Sift the flour and baking powder directly into the bowl and whisk until smooth and free of lumps.

Cook the pancakes on a dry non-stick frying pan (or with a little butter or oil) until lightly golden on both sides. Turn them over when bubbles start to appear on the surface. Transfer to a plate and continue with the remaining batter.

Serve with maple syrup, honey, fresh fruit, whipped cream or any toppings you like.
