
A simple traybake – but incredibly delicious! The magic lies in the orange zest and the soaking with fresh orange syrup. This orange and gooseberry cake is wonderfully moist and stays fresh for a long time. A real hidden gem – highly recommended!
Ingredients for orange gooseberry cake:
- 200 g butter
- 170 g caster sugar
- 220 g plain flour
- 2 teaspoons baking powder
- 4 large eggs
- zest of 1 medium orange
- 250 g gooseberries, trimmed
Ingredients for soaking syrup:
- juice of 1 medium orange
- 100 g sugar
All ingredients should be at room temperature. Sift the flour and baking powder together and set aside.
Cream the butter and sugar until light and fluffy. Add the orange zest and mix. Add the eggs one at a time, mixing well after each addition. Fold in the sifted flour and baking powder gently, just until combined. Add the gooseberries and mix.
Transfer the batter into a 30 x 23 cm tin lined with baking paper and level the surface.
Bake at 160°C for about 35 minutes, or until a skewer comes out clean. While still hot, slowly pour over the orange juice mixed with sugar, allowing it to soak in gradually.
