Courgette fritters

Delicate, simple courgette fritters – their beauty lies in their simplicity :). A version with grated carrot or potatoes (half and half) is equally delicious. With the addition of your favourite herbs, these fritters become wonderfully aromatic and full of flavour. Serve them as a savoury afternoon snack, as an accompaniment to a main course, or as an early supper.

Makes 15.

Ingredients for the courgette fritters:

  • 500 g courgettes (about 2 small courgettes)
  • 2 eggs
  • 1 small onion, finely chopped
  • 3 tablespoons plain flour
  • salt and freshly ground black pepper, to taste
  • optional – chopped fresh parsley, dill, thyme or garlic
  • 0il, for frying

Grate the courgettes (with the skin on) using the coarse side of a grater. Sprinkle with salt, mix well and leave to stand for 10 minutes. After this time, pour off the excess liquid and gently squeeze out any remaining moisture. Add the lightly beaten eggs, finely chopped onion and plain flour. If using, stir in the chopped parsley or garlic, then season with freshly ground black pepper.

Heat the oil in a frying pan over a low to medium heat. Spoon the mixture into the pan and fry the fritters on both sides until golden brown. Once cooked, transfer to a plate lined with kitchen paper to drain off any excess oil.
