
Cookie ice cream is not just for children. Simply add your family’s favourite biscuits to a creamy vanilla ice cream base and you will create a frozen dessert that everyone will love. Whether you choose chocolate chip cookies, butter biscuits, fruit and nut cookies or Oreo-style biscuits, the result is always delicious—creamy vanilla ice cream packed with irresistible crunchy cookie pieces.
Makes approximately 1 litre of ice cream.
Ingredients for the cookie ice cream:
- 300 ml whole milk
- 350 ml double cream
- 3 egg yolks, from large eggs
- 70 g sugar
- 1 teaspoon vanilla bean paste or vanilla extract
- 150–180 g favourite biscuits, broken into large chunks (such as chocolate chip cookies, butter biscuits, fruit and nut cookies, Oreo biscuits or similar)
Place the milk, cream and vanilla into a saucepan. Stir and bring just to the boil.
Meanwhile, place the egg yolks and sugar into the bowl of a stand mixer. Whisk until pale, thick and fluffy. Gradually pour in half of the hot milk mixture while whisking continuously. Return the egg and milk mixture to the saucepan containing the remaining milk. Cook gently over low heat, stirring constantly with a spoon, until the custard thickens slightly and lightly coats the back of the spoon. Do not allow the mixture to boil, as the custard may curdle. Remove from the heat immediately. Leave to cool, then cover with cling film and refrigerate until thoroughly chilled.
Pour the chilled mixture into an ice cream machine and churn according to the manufacturer’s instructions. During the final few minutes of churning, add the broken biscuits. Transfer the finished ice cream to a freezer-safe container and freeze for several hours until firm.
Without an ice cream machine:
Whisk the chilled mixture briefly, pour it into a freezer-safe container and place it in the freezer. For the first 3 hours, stir or blend the mixture approximately every 30 minutes to prevent ice crystals from forming and to keep the ice cream smooth and fluffy. Fold in the biscuit pieces at the end of this process. Freeze until fully set.
