Strawberry oat crumble slice

A wonderfully crumbly oat slice packed with sweet summer strawberries and plenty of rolled oats. The oats absorb excess fruit juices, creating a rich, flavourful filling and a perfectly textured crumble. Simple, comforting and bursting with strawberry flavour – the essence of summer in every bite!

Ingredients for the oat crumble:

  • 1½ cups plain flour
  • 1½ cups rolled oats
  • 180 g butter
  • ⅔–¾ cup sugar
  • ½ teaspoon baking powder

All ingredients should be at room temperature.

Place all ingredients into a large bowl and rub together with your fingertips until the mixture resembles coarse crumbs.

Ingredients for the strawberry filling:

  • 700 g strawberries
  • 3 tablespoons potato starch (or cornstarch)

Halve the strawberries, cutting larger ones into smaller pieces. Toss with the starch and set aside.

Line a 33 x 23 cm baking tin with baking parchment. Scatter half of the oat crumble mixture over the base and lightly press it down just enough to hold together (do not compact it firmly). Spread the strawberries evenly over the crumble base. Sprinkle the remaining crumble mixture evenly on top.

Bake at 175°C for approximately 35–40 minutes, or until golden brown. Remove from the oven and allow to cool before slicing. Before serving, dust with icing sugar if desired. The slice is also delicious served warm with a scoop of vanilla ice cream.
