
A simple yet delicious butter cake with a subtle custard flavor, apples, and cinnamon. Wonderfully soft and tender, perfect with a glass of milk for an afternoon treat :). Makes a large tray bake!
Ingredients for cinnamon apple cake:
- 200 g butter
- 3/4 to 1 cup caster sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 300 g plain cake flour
- 1.5 packets vanilla custard powder (unsweetened; 60 g total)
- 2 teaspoons baking powder
- 250 ml (1 cup) milk
- 0.7–1 kg apples
Additionally, after baking:
- 30 g melted butter
- cinnamon sugar for sprinkling: 1/4 cup caster sugar mixed with 1.5 teaspoons cinnamon
All ingredients should be at room temperature. Sift together the flour, custard powder, and baking powder. Set aside. Peel the apples, remove the cores, and cut into thicker slices.
In the bowl of a mixer, beat the butter and sugar until pale and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and mix. Add the sifted dry ingredients in 3 batches, alternating with the milk, mixing gently with a whisk or spatula only until combined — do not overmix.
Line a 23 x 32 cm baking pan with baking paper. Spread the batter evenly in the pan and arrange the apple slices on top.
Bake at 160°C for about 50 minutes, or until a skewer inserted into the center comes out clean. Remove from the oven and, while still hot, brush the cake with melted butter and sprinkle generously with cinnamon sugar.
