
A comforting winter dessert, perfect for the time of year when apples are one of the few locally grown fruits still in season. It’s quick to prepare and, served warm with a scoop of vanilla ice cream, makes an elegant and delicious dessert.
Ingredients for baked apples with walnuts and prunes:
- 3 medium apples
- 80 g walnuts, roughly chopped
- 25 g dried prunes, roughly chopped
- 1 tablespoon butter, at room temperature
- soft brown sugar, for sprinkling
Wash the apples. Cut them in half lengthways through the core and scoop out the cores, leaving a cavity for the filling (an ice cream scoop works particularly well for this).
In a bowl, combine the walnuts, prunes and butter. Fill the apple halves generously with the mixture, mounding it slightly, then sprinkle with soft brown sugar.
Bake at 180°C for about 30 minutes (larger apples may need around 40 minutes). For the last few minutes, place the apples under the grill to caramelise the sugar. Serve hot with a scoop of vanilla ice cream.
