
A very delicate and easy butter cake with apples and plenty of crumble topping. Perfect for an autumn afternoon – simply served with a cup of tea ;).
Ingredients for crumble topping:
- 185 g plain flour
- 125 g butter
- 140 g sugar
The butter should be at room temperature. Place the butter in a bowl, add the remaining ingredients and rub together with your fingertips until you get a crumbly mixture. Set aside.
Ingredients for apple filling:
- 6 large apples
- 2 tablespoons lemon juice
- 10 g butter
- 1 teaspoon ground cinnamon
Peel the apples, remove the cores and dice them. Toss with the lemon juice. Place in a frying pan with the butter and cinnamon, and cook over a low heat for about 5 minutes, or until slightly softened. Leave to cool.
Ingredients for cake batter:
- 100 g butter
- 100 g caster sugar
- 1 large egg
- 150 g plain flour
- 1 teaspoon baking powder
- 1 tablespoon milk
All ingredients should be at room temperature. Grease and line a 20 x 30 cm baking tin with parchment.
In a mixing bowl, beat the butter and sugar until pale and fluffy. Add the egg and mix until combined. Sift in the flour and baking powder, add the milk and gently mix with a spatula until just combined (do not overmix). Spread the batter evenly into the prepared tin. Arrange the cooled apple filling on top, then sprinkle generously with the crumble.
Bake at 160°C for about 40 minutes, or until the crumble is golden and a skewer inserted into the cake comes out clean. Remove from the oven, allow to cool, and dust with icing sugar if desired.
