Christmas cookies

Delicate shortbread-style Christmas sandwich biscuits with a hint of mandarin and cinnamon… I filled mine with jam, chocolate ganache and dulce de leche – something delicious for everyone :). Quick to make, great fun with children, and most importantly – absolutely delicious!

Makes about 30 sandwich biscuits (5 – 6 cm cutters).

Ingredients for Christmas cookies:

  • 250 g plain flour
  • 150 g butter, cold and diced
  • 110 g icing sugar
  • 1 egg
  • finely grated zest of 2 mandarins
  • 1 teaspoon ground cinnamon

Sift the flour, then add the butter and rub or chop quickly until the mixture resembles coarse crumbs. Add the remaining ingredients and quickly bring the dough together (you can also use a food processor). Shape into a ball, wrap in cling film and chill in the fridge for at least 1 hour.

Roll out the chilled dough to about 2 – 3 mm thick on a lightly floured surface. Cut out biscuits in your chosen shapes and place them on a lined baking tray.

Bake at 180°C for 10 – 12 minutes, or until lightly golden. Remove from the oven and cool on a wire rack.

Ingredients for filling options:

  • strawberry jam
  • dulce de leche (caramel)
  • chocolate ganache (heat 30 ml double cream, remove from heat, add 30 g chopped dark chocolate, leave for 2 minutes, then stir until smooth and allow to thicken)

Sandwich the biscuits together with your chosen fillings.
