Delicate and fluffy yoghurt pancakes with apple pieces. They are quick to make and so delicious! Serve warm with a sprinkling of cinnamon sugar. What a great taste of autumn!
Yield: 16 – 18 pancakes.
Ingredients for the yoghurt apple pancakes:
- 200 g yoghurt (natural or Greek)
- 2 large eggs
- 50 g caster sugar
- 130 g plain flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- a pinch of salt
- 2 – 3 small apples
Peel the apples and remove the seeds. Cut into quarters and then into slices.
In a bowl, mix the eggs with yoghurt to combine. Add sugar, vanilla extract, salt and mix again. Sift the plain flour and baking powder directly into the mixture and mix. Add the apple slices and mix.
Cook the pancakes on the medium power of the hob, with a minimum amount of oil. Cook until tiny bubbles appear, about 2 minutes, then flip and cook until golden brown, about two more minutes. Repeat with the remaining batter.
Coat the warm pancakes with cinnamon sugar.
Cinnamon sugar:
- 1/4 cup sugar
- 2 tsp ground cinnamon
Mix all the ingredients together.
