It’s an exceptionally chocolatey dessert or a second breakfast for chocolate lovers ;). Moist and fluffy pancakes with pieces of chocolate inside of them. They taste the best with fruit sauce and summer berries. I highly recommend it!
Yields: 12 pancakes.
Ingredients for the brownie pancakes:
- 1 and 1/4 cup milk
- 1 large egg
- 45 g butter, melted and cooled
- 1/4 cup caster sugar
- 1 and 1/4 cup plain flour
- 1/4 cup cocoa powder
- 2 tsp baking powder
- 1/3 cup chocolate chips or chopped chocolate
Mix the milk, egg, butter and sugar in a bowl using a whisk. Sift the dry ingredients directly into the mixture: plain flour, baking powder and cocoa powder; mix with a whisk. Add chocolate chips and mix.
Cook the pancakes on the medium power of the hob (with a small amount of oil), on both sides, until golden (1 whole tablespoon of pancake batter = 1 pancake).
Serve with chocolate sauce and fruit (e.g. strawberries and raspberries).
Ingredients for the chocolate sauce:
- 50 ml whipping cream, 30%
- 60 g dark chocolate, chopped
Heat the whipping cream in a small pot, almost to a boil, and remove from the hob. Add in the chocolate and leave for 2 minutes. After this time, mix to make a smooth chocolate sauce.
