
Delicious chocolate crêpes that are perfect for breakfast or dessert. Serve with your favourite jam, Nutella, fresh fruit or a sweet curd cheese filling. Easy to make and wonderfully indulgent.
Makes 20 crepes.
Ingredients for the chocolate crepes:
- 80 g dark chocolate (minimum 60% cocoa)
- 1 Tbsp cocoa powder
- 500 ml milk
- 1 (to 1 and 1/4) cup plain flour
- 3 large eggs
- 3 Tbsp icing sugar
- 2 Tbsp butter, melted
- 3 Tbsp dark rum
- pinch of salt
Gently heat the milk in a saucepan. Add the chocolate and stir until melted and smooth. Set aside to cool slightly. Add the remaining ingredients and blend until you have a smooth batter. Leave to rest for 30–60 minutes.
Heat a non-stick frying pan over a medium heat and lightly brush with oil. Pour in a small amount of batter, swirling the pan to coat the base evenly. Cook on both sides until just set — avoid overcooking, as softer crêpes have the best texture. Repeat with the remaining batter, lightly oiling the pan between each crêpe.
Serve with your favourite toppings.
