
An irresistibly chocolatey dessert – brownie pancakes – or the perfect brunch treat for chocolate lovers. Rich, decadent and fluffy pancakes packed with melted chocolate chunks. Best served with a fruity sauce and fresh red berries. Highly recommended!
Makes 12 pancakes.
Ingredients for the brownie pancakes:
- 1 and 1/4 cup milk
- 1 large egg
- 45 g butter, melted and cooled
- 1/4 cup caster sugar
- 1 and 1/4 cup plain flour
- 1/4 cup cocoa powder
- 2 tsp baking powder
- 1/3 cup chocolate chips or chopped chocolate
Whisk together the milk, egg, butter and sugar in a bowl. Sift in the dry ingredients – plain flour, baking powder and cocoa powder – and whisk until just combined. Fold in the chocolate chips.
Cook the pancakes over medium heat in a lightly oiled frying pan, cooking on both sides until golden (1 tablespoon of batter makes 1 pancake).
Serve with chocolate sauce and fruit, such as strawberries and raspberries
Ingredients for the chocolate sauce:
- 50 ml whipping cream
- 60 g dark chocolate, chopped
Heat the whipping cream in a small saucepan until almost boiling, then remove from the heat. Add the chocolate and leave to stand for 2 minutes, then stir until smooth and glossy.
