Apple Swiss roll

A soft and quick apple Swiss roll (especially easy if, like me, you use jarred apple filling) – and my children absolutely love it :). Perfect for a light afternoon treat or simply with a cup of coffee. Highly recommended!

Ingredients for the sponge:

  • 4 eggs
  • 100 g caster sugar
  • 115 g plain flour
  • ¾ teaspoon baking powder
  • 3 tablespoons potato starch (or cornflour)
  • an extra handful of caster sugar, for sprinkling

All ingredients should be at room temperature. Sift together the flour, starch and baking powder.

Whisk the egg whites until stiff peaks form. Gradually add the sugar, tablespoon by tablespoon, continuing to whisk. Add the egg yolks and whisk until combined. Fold in the dry ingredients gently with a spatula, taking care not to deflate the mixture.

Prepare a clean tea towel and lightly sprinkle it with sugar. Line a 28 × 42 cm baking tray with baking parchment and spread the batter evenly.

Bake at 180°C for about 10 – 12 minutes, or until a skewer inserted comes out clean (do not overbake – an overbaked sponge will crack when rolled). Immediately after baking, turn the sponge out onto the prepared tea towel, parchment side up. Carefully peel off the paper, then roll the sponge up with the towel along the long side. Leave to cool completely in this shape.

Ingredients for the apple filling:

  • 1 jar stewed apples (approx. 800 g)
  • 1 packet lemon jelly (for 500 ml liquid)
  • 125 ml boiling water
  • 1 teaspoon cinnamon (if not already in the apples)

Dissolve the jelly in 125 ml boiling water and set aside. Heat the apples in a saucepan, add cinnamon if needed, then stir in the dissolved jelly. Mix well and leave to cool. Chill in the fridge until slightly set.

Assembly:

Unroll the cooled sponge and remove the towel. Spread the apple filling evenly over the surface, then roll it up again. Refrigerate overnight. Before serving, dust with icing sugar and slice diagonally.

Tip: If using homemade apples that are more liquid, simply add the jelly powder directly to the hot apples and stir until dissolved (no extra water needed).
