
The best chocolate chip pancakes! Instead of chopped chocolate, you can also use chocolate chips. They’re fluffy, quick to make and simply delicious :).
Ingredients for the chocolate chip pancakes:
- 2 large eggs
- 50 g caster sugar
- 330 ml milk
- 60 g butter, melted and cooled
- 280 g plain flour
- 3 tsp baking powder
- a pinch of salt
- 70 g chocolate chips or chopped dark or milk chocolate
All ingredients should be at room temperature.
Place the eggs and sugar in a mixing bowl and whisk until light and slightly fluffy. Add the milk and melted butter, whisking to combine. Sift in the flour, baking powder and salt, then whisk gently until just combined. Fold in the chocolate chips or chopped chocolate.
Heat a non-stick frying pan over medium heat and add a little oil. Spoon about 1 Tbsp of batter per pancake into the pan. Cook for about 2 minutes, until small bubbles appear on the surface, then flip and cook for a further 2 minutes until golden.
Repeat with the remaining batter.
