Chocolate chip pancakes

The best chocolate chip pancakes! Instead of chopping up your favourite chocolate, you can use chocolate chips or chunks.  These pancakes are fluffy, quick to make and simply delicious :).

Ingredients for the chocolate chip pancakes:

  • 2 large eggs
  • 50 g caster sugar
  • 330 ml milk
  • 60 g butter, melted and cooled
  • 280 g plain flour
  • 3 tsp baking powder
  • pinch of salt
  • 70 g chocolate chips or chopped dark/milk chocolate

All ingredients should be at room temperature.

Place the eggs with sugar in the mixing bowl and whip until fluffy. Add milk and melted butter, and continue to whip. Sift the plain flour with baking powder and salt into the bowl with the pancake mixture. Mix with a whisk until the ingredients combine. Add chocolate and mix gently.

Cook the pancakes on the medium power of the hob, with a minimum amount of oil (1 whole tablespoon = 1 pancake). Cook until tiny bubbles appear, about 2 minutes, then flip and cook until golden brown, about two more minutes. Repeat with the remaining batter.
