Fluffy vanilla fromage frais pancakes

Simple, fluffy pancakes made with vanilla fromage frais – a favourite with children :). For this recipe, use a good-quality vanilla fromage frais that is reasonably thick and free from unnecessary additives. You will probably have the rest of the ingredients in your kitchen already. These pancakes are quick to prepare and delicious!

Makes 20–25 pancakes.

Ingredients:

  • 400 g vanilla fromage frais
  • 2 large eggs
  • 140 g plain flour
  • 1 tsp baking powder
  • 2 tsp icing sugar
  • a pinch of salt

All ingredients should be at room temperature.

Place the fromage frais and eggs in a bowl. Gently whisk with a balloon whisk, just until combined. Sift in the flour and baking powder, add the icing sugar and salt, then whisk until just combined. Depending on the consistency of the fromage frais, if the batter seems too runny, you can add another 1 tbsp of flour.

Cook the pancakes over medium heat using a minimal amount of oil (for example, in a non-stick frying pan lightly sprayed with oil). Spoon a heaped tablespoon of batter onto the pan and cook until bubbles appear on the surface. Flip and cook on the other side until golden.

While still warm, dust the pancakes with icing sugar and serve with fresh fruit or fruit sauce.
