
Italian apple cake, supposedly an original Italian family recipe :). It cannot really compare with Polish apple pie – it is not packed with apples in the same way; it is simply a cake with apples arranged on top. Best served warm, with whipped cream or mascarpone, or simply alongside a cup of tea or an espresso. I took inspiration from Nigella’s description and left the apples on top unpeeled, using a dessert apple variety, which certainly makes the cake look more attractive, but… I’ll leave that decision up to you. In my opinion, a cooking apple variety would work better here. Highly recommended!
Ingredients for the Italian apple cake:
- 100 g butter
- 150 g caster sugar
- 1 tsp vanilla extract
- 2 large eggs
- finely grated zest of 1 lemon
- 250 g plain flour
- 2 tsp baking powder
- 75 ml milk
- a pinch of salt
- 3 apples (approximately 500 g in total)
All the ingredients should be at room temperature.
Place the butter and sugar in the bowl of a stand mixer. Beat until light and fluffy. Add the vanilla extract and beat until combined. Add the eggs one at a time, beating until combined after each addition. Add the freshly grated lemon zest and beat until combined. Sift the plain flour and baking powder directly into the butter mixture, then add the milk and salt. Mix with a spatula just until the ingredients are combined, no longer. Cut one of the apples in half, remove the core and peel it. Cut into small cubes, add to the batter and mix.
Line the bottom of a 22 or 23 cm springform tin with baking paper. Transfer the batter to the tin and smooth the surface. Remove the cores from the remaining 2½ apples, cut them into quarters, then cut each quarter into 3 pieces. Arrange them over the cake. Sprinkle the top with demerara sugar and cinnamon (ingredients below).
Bake at 175°C for approximately 45 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool.
Serve the Italian apple cake with whipped cream.
Additionally, for sprinkling:
- 1 tsp demerara sugar
½ tsp ground cinnamon
