Mini brownie cups with Toffifee

Some desserts need a bit of persuasion to get people to try them… not this one. These disappear before they even make it to the table — sometimes straight from the tray while still warm! These delightful chocolate brownie cups with Toffifee are the perfect bite-sized treat. Ideal for parties — no slicing required, just arrange them on a plate and watch them vanish ;). The Toffifee pralines are pressed into the brownies immediately after baking — the heat melts them slightly and… they taste absolutely incredible.

Makes 24 mini cups.

Ingredients for mini brownie cups with Toffifee:

  • 100 g dark chocolate, chopped
  • 100 g butter
  • 2 eggs
  • 180 g caster sugar (or less, to taste)
  • 100 g plain flour
  • ¾ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 24 Toffifee pralines

All ingredients should be at room temperature.

Place the butter in a saucepan and heat until melted. Remove from the heat, add the chopped chocolate and leave for 2 minutes. Stir until smooth. Allow to cool slightly.

In a bowl, whisk together the eggs and sugar. Add the cooled chocolate mixture and whisk to combine. Add the vanilla extract, sifted flour and baking powder. Mix gently until smooth and combined.

Grease a mini muffin tin and dust lightly with flour, shaking off any excess. Spoon the batter into the moulds, filling them no more than ¾ full.

Bake at 180°C for about 10 minutes. The brownies should rise slightly and develop small cracks on top. Remove from the oven and immediately press one Toffifee into each hot brownie. Allow to cool before removing from the tin.
