Pistachio Brownies

Pistachio brownies take classic brownies to a whole new level. They’re absolutely delicious! Friends have even nicknamed them “Dubai brownies” ;). To make pistachio brownies, in addition to the usual brownie ingredients, you’ll need 100% pistachio paste (with or without added sugar) and chopped pistachios. I don’t recommend using pistachio spread here – although tasty and sweet, with a low pistachio content (max 50%) it will be overpowered by the chocolate flavour.

Ingredients for the pistachio brownies:

  • 180 g butter
  • 100 g dark chocolate (70%), chopped
  • 150 g dark chocolate (50%), chopped
  • 3 large eggs
  • 2 tsp vanilla extract
  • 250 g caster sugar
  • 100 g plain flour
  • ½ tsp baking powder
  • a pinch of salt
  • 250 g pistachio paste (sweetened*)
  • ½ cup chopped unsalted pistachios

All ingredients should be at room temperature.

Melt the butter in a saucepan, then remove from the heat. Add the chopped dark chocolate to the hot butter and set aside for 2 minutes. Stir until smooth and glossy. Leave to cool (or until just warm, but not hot) – it should remain pourable.

In a bowl, lightly whisk the eggs with a balloon whisk (do not beat). Add the vanilla extract and sugar, and whisk for a while until well combined. Stir in the cooled chocolate mixture. Sift the flour and baking powder directly into the chocolate mixture, add the salt, and mix only until just combined.

Pour the batter into a 23 cm square tin, buttered and lined with baking parchment. Spoon small amounts of pistachio paste over the top and swirl gently with the tip of a knife to create a marbled effect. Sprinkle with chopped pistachios.

Bake at 160°C (fan) or 180°C (conventional) for 30–33 minutes. The brownie will rise slightly and may crack around the edges or wrinkle on top. A skewer inserted into the centre may come out moist, but there should be no raw batter on it. Brownies are not usually tested with a skewer, as it’s not entirely reliable.

Leave to cool completely, then cut into squares.

*Pistachio paste (pistachio butter) is made from 100% ground pistachios with no added ingredients. It has the consistency of natural peanut butter and an intense pistachio aroma. If you can only find unsweetened pistachio paste, simply mix it with sifted icing sugar to taste.
