
This no-bake Milky Way cake is a quick and easy dessert inspired by the popular Milky Way sandwich biscuit. Although it doesn’t taste exactly like the famous chocolate bar, it has its own unique charm. Layered between chocolate petit beurre biscuits is a rich powdered milk filling with an intensely milky flavour. If you’re a fan of powdered milk desserts, you’ll love this recipe. It’s perfect for celebrations and can be made all year round.
Ingredients for the biscuit layers:
- 400 g chocolate petit beurre biscuits
Ingredients for the powdered milk filling:
- 250 ml whole milk
- 60 g caster sugar
- 8 g vanillin sugar (or 1 teaspoon vanilla extract)
- 250 g unsalted butter, at room temperature
- 400 g full-fat powdered milk
All ingredients should be at room temperature.
Place the milk and both sugars in a small saucepan. Heat gently, stirring until the sugar has dissolved. Remove from the heat and leave to cool completely.
In the bowl of a stand mixer, beat the butter until pale and fluffy. Slowly pour in the cooled milk mixture, beating continuously until fully incorporated. Add the powdered milk in three batches, mixing well after each addition until smooth.
Ingredients for the chocolate ganache:
- 80 ml double cream
- 100 g milk chocolate, finely chopped
Heat the double cream until just below boiling. Remove from the heat, add the chopped chocolate and leave for 2 minutes. Stir until smooth and glossy, then leave to cool slightly until it begins to thicken.
To assemble:
Line an 18 × 28 cm baking tin with baking paper. Arrange a layer of chocolate petit beurre biscuits over the base. Spread over half of the powdered milk filling, then cover with another layer of biscuits. Spread over the remaining filling and finish with a final layer of chocolate biscuits. Refrigerate for 2 hours.
Remove from the fridge and pour over the slightly thickened chocolate ganache, spreading it evenly over the top.
The cake is ready to serve after chilling and will keep well in the refrigerator for up to 5 days.
