
Syrniki (which I call twarożniki) originate from Russian cuisine, although they are also very popular in Ukraine and Belarus. These are fairly filling curd cheese pancakes (like small portions of cheesecake for breakfast), most often served sweet, and traditionally accompanied by soured cream, jam or fresh fruit. They are best served warm. A nutritious yet delicious breakfast or dessert :).
For this recipe, you need to use traditional curd cheese sold in a block (not ground).
Makes 10.
Ingredients for the syrniki:
- 450 g full-fat or semi-fat curd cheese
- 1 large egg
- 3 tbsp caster sugar
- 2 tsp vanillin sugar (or sugar with vanilla)
- 3–4 tbsp plain flour
Using a fork, thoroughly break up the curd cheese in a bowl. Add the egg and both types of sugar and mix. Add the plain flour (starting with 3 tablespoons and adding the fourth if necessary) and mix.
Shape the mixture into syrniki (the consistency and shape of the mixture as you form them is similar to that of meatballs made from minced meat 😉 ), coat them in plain flour and fry in hot oil on both sides until golden brown. Serve hot with soured cream and fresh fruit/jam.
Additionally:
- rapeseed oil, for frying
- plain flour, for coating
- soured cream, to serve
- fresh fruit or jam, to serve
