
‘Cheese’ cake is actually a dessert that looks just like a block of yellow cheese, complete with plenty of large holes! It is incredibly quick and easy to make, using just a few ingredients. Even a child could make it ;). The main ingredient is mango purée, which gives the dessert both its colour and flavour. ‘Cheese’ cake is perfect for children’s parties, although slightly older ones will love it too. It has a delicate flavour, rather like a yoghurt-based no-bake cheesecake, and that is exactly how it is served. Mine is decorated with mice made from sugar paste, but you could also make mice from, for example, halved peaches in syrup decorated with chocolate. I can’t wait to see your sweet creations!
Ingredients for the ‘Cheese’ cake:
- 370 g boiling water
- 2 packets of lemon jelly, 70 g each*
- 400 g thick natural or Greek yoghurt
- 250 g mango purée (from a tin)
All the ingredients should be at room temperature.
Prepare an 18 cm springform tin and line with baking paper.
Pour the boiling water into a bowl, add both packets of jelly powder and stir until completely dissolved. Set aside to cool to room temperature, but do not allow it to set.
Place the natural yoghurt and mango purée in the bowl of a stand mixer. Mix until combined. Add the cooled jelly and mix again. Place in the fridge until slightly thickened (keep an eye on it, as it thickens quickly!), then pour into the springform tin. Place in the fridge until completely set, for several hours.
Before serving, transfer to a plate or cake stand and make the holes, for example using a melon baller for the larger holes and a drinking straw for the smaller ones.
Store the ‘Cheese’ cake in the fridge.
* Mango-flavoured jelly would be ideal, but it is difficult to find. I used lemon jelly and clear grape jelly, but any other yellow jelly will work.
