
How often do you buy these kinds of cookies? If the answer is “a bit too often”, it’s definitely worth making them at home :). These jam cookies are absolutely delicious – buttery, crumbly and very easy to make. It’s really just a matter of mixing a few ingredients together. The dough is piped onto the baking tray, which can take a bit of effort; if you have a cookie press, now is the perfect time to use it – it makes the process much easier! Both children and adults love these classic cookies.
Makes 2 baking trays.
Ingredients for jam cookies:
- 220 g butter
- 100 g icing sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- 300 g plain flour
- 50 g potato starch (or cornflour)
- a pinch of salt
- a few tablespoons thick jam (e.g. cherry)
All ingredients should be at room temperature.
Cream the butter and icing sugar until pale and fluffy. Add the egg yolks and vanilla extract, mixing until well combined. Add the flour, starch and salt, and mix until a smooth dough forms.
Transfer the dough into a piping bag fitted with a large star nozzle (e.g. Wilton 1M).
Line two baking trays with baking parchment. Pipe the cookies into small rounds, leaving a little space between them (they spread only slightly). Add a small dollop of jam in the centre of each.
Bake at 180°C for about 12 minutes, or until the edges are lightly golden. Remove from the oven and cool on a wire rack.
