
A simple cake with plums and custard. It disappears from the table in no time! Soft, moist and packed with creamy custard and juicy fruit. Easy enough to make and guaranteed to be enjoyed by everyone.
Ingredients for the custard:
- 1 packet of vanilla-flavoured custard powder (for 500 ml milk)
- 500 ml milk
- 2 tablespoons sugar
Prepare the custard according to the instructions on the packet. Remove from the heat, transfer to a bowl and cover with cling film, pressing it directly onto the surface of the custard. Set aside to cool completely.
Ingredients for the plum and custard cake:
- 140 g butter
- 150 g caster sugar
- 4 large eggs
- 200 g plain flour
- 90 g sour cream
- 1 teaspoon vanilla extract
- 1½ teaspoons baking powder
- the cooled custard prepared above
- 500 g plums, stones removed
All the ingredients should be at room temperature.
Place the butter and sugar in the bowl of a stand mixer and beat until pale and fluffy. Add the eggs one at a time, beating well after each addition until fully incorporated. Add the vanilla extract and beat in. (The mixture may look slightly curdled at this stage, but this will not affect the finished cake.) Add the sour cream, sifted flour and baking powder. Fold with a spatula just until combined; do not overmix.
Line a 22 x 33 cm baking tin with baking paper. Transfer the batter to the tin and level the surface. Spoon the custard over the batter, spacing it out rather than spreading it into an even layer. Arrange the plums on top, cut side up.
Bake at 160–170°C for about 40 minutes, or longer if necessary, until a skewer inserted into the cake comes out clean.
Remove from the oven and leave to cool in the tin. Dust with icing sugar before serving, if desired.
