Plum crumble with granola

I always kick off plum season with a classic plum crumble :). This time, it’s extra crunchy and indulgent, with the addition of granola (you can use homemade granola or your favourite shop-bought variety). This plum crumble with granola is absolutely delicious – highly recommended!

Ingredients for the plum and granola crumble:

  • 500–600 g plums, stones removed
  • 2 tablespoons orange juice
  • 75 g plain flour
  • 50 g brown sugar + 2 tablespoons extra
  • 100 g cold butter
  • 1 teaspoon ground cinnamon
  • 200 g granola, your favourite variety
  • 20 g flaked almonds
  • 2 tablespoons desiccated coconut

Place the flour, sugar, butter and cinnamon in a bowl. Rub together with your fingertips until the mixture resembles breadcrumbs. Add the granola, flaked almonds and desiccated coconut and mix together.

Grease a 25 x 16 cm baking dish with butter. Arrange the halved and stoned plums in the dish, cut side up. Sprinkle with the extra 2 tablespoons of sugar and drizzle with the orange juice. Sprinkle evenly with the prepared crumble topping.

Bake at 180°C for about 30 minutes, or until the crumble is golden brown. The plum filling should be visibly bubbling. Remove from the oven and leave to cool slightly.

Plum crumble with granola is best served warm, for example with ice cream.
