An incredibly delicious dessert – hot plums baked under a buttery almond crumble topping. Perfect for an afternoon treat when it’s cold, rainy and windy outside and you’re holding a bowl of this warm, comforting dessert in your hands. Highly recommended!
Ingredients for the plum filling:
- 600 g plums, pitted and quartered
- 4 tablespoons demerara sugar
- 100 ml orange juice
- 1 teaspoon ground cinnamon
Ingredients for the crumble topping:
- 150 g plain flour
- 75 g butter
- 2 tablespoons demerara sugar
- 4 tablespoons rolled oats
- 50 g flaked almonds, plus extra for sprinkling
Place the plums, sugar, orange juice and cinnamon into a saucepan. Stir and cook for 3–4 minutes. Transfer the fruit mixture to a 25 cm tart dish.
Combine all the crumble ingredients, rubbing them together with your fingertips until the mixture forms both small and large crumbs. Scatter the crumble over the fruit and sprinkle with extra flaked almonds.
Bake at 180°C for approximately 25 minutes. Remove from the oven and serve immediately, preferably with a scoop of vanilla ice cream.
Enjoy!
