Curd cheese cookies with apples

These lightly sweet curd cheese cookies filled with fruit have become our cookie recipe of the year. They are absolutely delicious! Quick to make, wonderfully versatile and loved by children, they are the perfect homemade treat for any occasion. Ready for a fantastic curd cheese cookie recipe? 🙂

Makes approximately 25 cookies.

Ingredients for the curd cheese cookies:

  • 250 g plain flour
  • 250 g full-fat or semi-fat curd cheese (twaróg), finely ground three times
  • 125 g butter*
  • 8 g vanillin sugar
  • 3–4 medium apples
  • icing sugar, for dusting

All ingredients should be at room temperature. Wash, peel and core the apples, then cut them into eighths.

Combine the flour, curd cheese, butter and vanilla sugar. Knead or mix until a smooth, slightly sticky dough forms. Cover and chill in the refrigerator for 60 minutes.

Roll out the dough on a lightly floured surface to a thickness of approximately 3 mm. Using a drinking glass or round cutter, cut out circles similar in size to those used for pierogi. Place a piece of apple in the centre of each circle. Fold the dough over to create a half-moon shape and pinch the corners together to seal. Arrange the cookies on baking trays lined with baking parchment, leaving a little space between each one.

Bake at 180°C for approximately 25 minutes, or until lightly golden. Remove from the oven and leave to cool on a wire rack. Once cooled, dust generously with icing sugar before serving.

Although apples are a classic filling, these curd cheese cookies work beautifully with many other fruits, including: peaches, blueberries, strawberries.

* You can increase the butter to 200 g if you would like the cookies to be more buttery and crumbly. In that case, use cold butter cut into small cubes or coarsely grated before mixing it into the dough.
