
Peaches and coconut are a perfect match. Add a crisp buttery crumble and what more could you ask for? This coconut peach crumble with vanilla is a simple, quick dessert that’s perfect for an afternoon treat.
Makes 4 servings.
Ingredients for coconut crumble:
- 110 g plain flour
- 50 g desiccated coconut
- 100 g butter, softened
- 60 g caster sugar
Place the butter, flour, desiccated coconut and sugar into a bowl. Rub the ingredients together with your fingertips until the mixture resembles coarse crumbs. Set aside.
Ingredients for peach filling:
- 5 peaches, cut into eighths
- 2 tablespoons caster sugar
- 1–1½ tablespoons potato starch
- 1 teaspoon vanilla bean paste or the seeds from 1 vanilla pod
Combine all the filling ingredients in a bowl.
Butter 4 individual ovenproof dishes. Divide the peach filling evenly between them, then sprinkle the crumble mixture over the top. Bake at 175°C for about 25 minutes, or until the crumble is golden brown and the fruit filling is bubbling. Remove from the oven and leave to cool for a few minutes.
Serve warm, if you like, with vanilla ice cream or lemon sorbet.
