
A refreshing rhubarb and strawberry smoothie with the addition of banana for a perfectly creamy texture. It can also be made dairy-free using pomegranate or grape juice instead of milk. Light, nourishing, and wonderfully cooling – especially on hot days. If you’re using only fresh fruit, it’s worth adding a few ice cubes and serving it well chilled.
Serves 2.
Ingredients for rhubarb and strawberry smoothie:
- 200 g strawberries
- 200 g rhubarb (frozen)
- 1 banana
- 150 ml pomegranate or grape juice (or milk)
- 1 tablespoon agave syrup (or to taste)
- 1 teaspoon vanilla bean paste
Hull the strawberries. Slice the rhubarb stalk into 1 cm pieces (no need to peel). Peel the banana.
Place all ingredients into a blender and blend until smooth. Pour into glasses and serve immediately.
