
Arctic roll with raspberries is a sponge cake roll filled with ice cream. Traditionally, the filling often includes jam alongside the ice cream, but here fresh raspberries take its place. You can also make a vanilla sponge roll and fill it with your favourite ice cream — the flavour possibilities are endless. Arctic roll makes a wonderful dessert when temperatures outside are reaching 30°C!
Ingredients for the cake:
- 4 eggs
- 100 g caster sugar
- 100 g plain flour
- 3/4 teaspoon baking powder
- 4 tablespoons cocoa powder
- 50 g dark chocolate, finely grated
- a few tablespoons caster sugar, for dusting
All ingredients should be at room temperature. Sift together the flour, cocoa powder and baking powder. Set aside.
Whisk the egg whites until stiff peaks form. Gradually add the sugar, one tablespoon at a time, whisking constantly. Add the egg yolks gradually while continuing to whisk. Fold in the dry ingredients and grated chocolate. Mix gently with a spatula so the batter stays light and airy.
Prepare a clean kitchen towel and sprinkle it with a few tablespoons of caster sugar. Line a shallow 30 x 36 cm baking tray with baking paper. Pour the sponge mixture into the tray and spread evenly.
Bake at 180°C for about 10 – 12 minutes. Immediately after baking, turn the sponge out onto the prepared towel with the baking paper facing upwards. Carefully peel away the paper. Roll the sponge up together with the towel, starting from the longer side. Leave to cool completely in this shape.
Ingredients for ice cream filling:
- 1 litre vanilla ice cream (“soft scoop”)
- 200 g raspberries
Remove the ice cream from the freezer and let it soften slightly. Mix briefly until smooth and spreadable. Unroll the cooled sponge cake and remove the towel. Immediately spread with the softened ice cream, sprinkle with raspberries broken into pieces, then roll the cake up again. Wrap tightly in cling film and place in the freezer for several hours.
Note: An easier method is to shape the softened ice cream into a thick log the length of the sponge roll and simply wrap the sponge around it.
