
A soft, fluffy honey cake with apples – we absolutely loved it. Maybe it’s because I’m already missing festive baking? 😉 The addition of apples is a perfect touch! The cake is aromatic, moist and delicious – what more could you want?
Ingredients for apple honey cake:
- 200 g butter
- 40 g caster sugar
- 175 g runny honey
- 3 large eggs
- 250 g plain flour
- 1½ teaspoons baking powder
- ½ teaspoon bicarbonate of soda
- 1 teaspoon ground ginger or cardamom
- 1 teaspoon ground cinnamon
- 1½ large apples (for the batter)
Additionally:
- 1 large apple (for topping)
- 50 g honey
All ingredients should be at room temperature. Peel the apples for the batter, remove the cores and dice them. For the topping, there’s no need to peel – simply core and slice into thin wedges.
In a mixing bowl, beat the butter and sugar until light and fluffy. Add the honey and mix well (if the honey is solid, gently warm it until liquid, then cool slightly). Add the eggs one at a time, mixing well after each addition. Sift in the flour, baking powder, bicarbonate of soda and spices. Fold gently with a spatula until combined. Add the diced apples and mix briefly.
Line the base of a 23 cm round tin with baking paper. Transfer the batter into the tin and level the surface. Arrange the apple slices on top.
Bake at 160°C for about 60 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven. Warm the extra honey (50 g) and brush it over the cake while still warm.
