
Apple and orange cake with cinnamon is delicious and quick to make. The addition of orange gives this simple apple cake a completely new dimension and makes it anything but ordinary ;). I like to serve it with crème anglaise.
Ingredients for the apple and orange cake with cinnamon:
- 120 g butter
- 150 g caster sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 300 g plain flour
- 1½ teaspoons baking powder
- 160 ml orange juice
- finely grated zest of ½ an orange
- 3 large apples, peeled and cut into eighths
For the topping:
- 20 g butter, melted
- 1 tablespoon caster sugar
- 1 teaspoon ground cinnamon
All the ingredients should be at room temperature.
Place the butter and sugar in the bowl of a mixer and beat until pale and fluffy. Add the vanilla extract and orange zest and mix well. Add the eggs, one at a time, beating well after each addition. Sift the flour and baking powder directly into the mixture, add the orange juice and fold together with a spatula just until combined.
Line a 23 cm round tin with baking paper. Transfer the batter to the tin and smooth the surface. Arrange the apple wedges on top, pressing them lightly into the batter.
Bake at 160°C for about 45 minutes, or until a skewer inserted into the centre comes out clean. Remove the cake from the oven and, while still hot, brush the top with the melted butter and sprinkle with the sugar mixed with cinnamon. Leave to cool.
