
Bounty cookies – coconut and milk chocolate! They HAVE to taste good :). These crisp coconut cookies are packed with desiccated coconut and milk chocolate chips (or chopped milk chocolate). Perfect with a glass of milk – absolutely delicious! I’m sure you’ll love these coconut cookies!
Makes about 30 cookies.
Ingredients for bounty cookies:
- 120 g butter
- ⅔ cup caster sugar
- pinch of salt
- 1 large egg
- 1¼ cups plain flour
- 1¼ cups desiccated coconut
- 1 tsp baking powder
- 1 tbsp coconut liqueur or vanilla extract
- 100 g milk chocolate chips or chopped milk chocolate
All the ingredients should be at room temperature.
Place the butter and sugar in the bowl of a stand mixer and beat until light and fluffy. Add the egg and salt and continue beating until combined. Add the flour, desiccated coconut, baking powder and coconut liqueur, and mix until just combined. Finally, add the chocolate and mix briefly.
Place balls of dough, about the size of a large walnut, onto a baking tray lined with baking paper, leaving a little space between them. If the dough is very sticky, chill it in the fridge first. Flatten the cookies slightly with a spoon.
Bake the Bounty cookies at 175°C for 13–15 minutes, or a little longer, until golden brown. Remove from the oven and leave to cool on a wire rack.
