Easy peanut butter cookies

It couldn’t really be simpler – peanut butter, an egg and sugar. One, two, three and you’ll have delicious, easy peanut butter cookies ready to enjoy! They’re also flourless and made without baking powder or bicarbonate of soda. Despite that, they rise nicely while baking and, once cooled, remain slightly crisp and sandy in texture. Highly recommended!

Makes 18 – 20 cookies.

Ingredients for an easy peanut butter cookies:

  • 280 g peanut butter (smooth or crunchy)
  • 1 large egg
  • ⅓ cup caster sugar (you can also use a “healthier” option such as coconut sugar or xylitol)

All ingredients should be at room temperature.

Place all the ingredients in the bowl of a mixer and mix until fully combined.

Shape the dough into small balls and place them on a baking tray lined with baking parchment, leaving some space between each one. Flatten each ball gently with a fork to create the classic criss-cross pattern.

Bake at 180°C for about 12 minutes, or until lightly golden. Remove from the oven and allow to cool on a wire rack.
