
Wonderfully milky cookies that are lightly crisp, soft in the centre and taste a little like miniature sponge cakes. Perfect for children! Although they are quite sweet, they are truly delicious and can easily be packed into a lunchbox for those last summer days at school. Highly recommended!
Makes 30 cookies.
Ingredients for milky white chocolate cookies:
- 150 g butter
- ½ cup icing sugar
- 2 large eggs
- 2 cups plain flour
- ½ cup milk powder
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 125 g white chocolate, chopped
All ingredients should be at room temperature.
Place the butter and icing sugar into the bowl of a stand mixer and beat until light and fluffy. Lightly whisk the eggs in a small bowl, then gradually add them to the butter mixture, beating continuously. The mixture may curdle at this stage, but this will not affect the final result. Add the flour mixed with the baking powder, the milk powder and the vanilla extract. Mix until just combined. Finally, fold in the chopped white chocolate.
Shape the dough into balls about the size of a small walnut and place them on a baking tray lined with baking parchment, leaving space between each cookie. Gently flatten them slightly.
Bake the milky cookies at 190°C for 10 minutes, or until lightly golden. Remove from the oven and leave to cool completely on a wire rack.
