Pistachio puff pastry rolls

Pistachio puff pastry rolls are quick to make and irresistibly delicious. Made with ready-rolled, all-butter puff pastry, they are beautifully flaky while being wonderfully simple and quick to prepare. These pistachio rolls require just a handful of ingredients and can be on the table in no time, making them perfect for an afternoon treat. Highly recommended!

Makes 10.

Ingredients for the pistachio puff pastry rolls:

  • 2 × 320 g sheets of all-butter puff pastry, frozen or chilled
  • 200–250 g pistachio cream or sweetened pistachio paste, at room temperature
  • 1 egg, beaten
  • ½ cup chopped pistachios, for sprinkling
  • icing sugar, for dusting
  • fresh raspberries, to serve

Lightly dust the work surface with flour. Unroll the first sheet of puff pastry (if frozen, thaw it beforehand). Spread evenly with the pistachio cream or sweetened pistachio paste, then cover with the second sheet of puff pastry.

Using a pizza cutter (ideally) or a sharp knife, cut the pastry into 8–10 strips, approximately 2–2.5 cm wide. Cut along the longer side of the pastry so that the strips are as long as possible. Twist each strip several times along its length, then shape it into a little roll, as shown in the photo. Arrange on a baking tray lined with baking paper. Brush with the beaten egg and sprinkle with chopped pistachios.

Bake the pistachio puff pastry rolls at 200°C for approximately 25 minutes, or until puffed, golden and thoroughly baked. Remove from the oven and leave to cool. Dust with icing sugar before serving and serve with fresh raspberries.
