Triple chocolate cookies

These triple chocolate cookies made a perfect homemade Christmas gift – and turned out to be a total hit. Slightly crisp on the outside, soft and chewy in the centre, and intensely chocolatey. Everyone loved them!

Makes about 40 cookies.

Ingredients for triple chocolate cookies:

  • 125 g butter
  • 160 g light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 185 g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/4 teaspoon baking powder
  • 35 g cocoa powder
  • 85 g raisins
  • 95 g milk chocolate, chopped
  • 75 g white chocolate, chopped
  • 75 g dark chocolate, chopped

All ingredients should be at room temperature.

Cream the butter, sugar, and vanilla until light and fluffy. Add the egg and beat until combined. Add the flour, bicarbonate of soda, baking powder, and cocoa powder. Mix until just combined. Fold in the raisins and all three types of chopped chocolate.

Shape the dough into small balls (about the size of a small walnut) and place on a baking tray lined with baking paper. Lightly flatten with a spoon, leaving about 5 cm between each cookie – they will spread.

Bake at 170°C for about 10 minutes. Let them sit on the tray briefly (they will be very soft), then transfer to a wire rack to cool completely.
