Vanilla cheesecake doughnuts with cinnamon sugar

Quick, foolproof, light and incredibly easy to make! I rarely have vanilla homogenised cheese in the house, so I had never had the opportunity to make these before. Honestly, I never expected them to be so delicious :). I coated them in a cinnamon sugar mixture, which makes them completely irresistible. Another huge advantage is how quickly they come together – just a matter of minutes.

Makes one large platter.

Ingredients for the doughnuts:

  • 300 g vanilla homogenised cheese
  • 3 eggs
  • 1½ cups plain flour
  • 1½ teaspoons baking powder
  • a pinch of salt
  • vegetable oil, for deep-frying

For the cinnamon sugar coating:

  • caster sugar mixed with ground cinnamon (for every 100 g sugar, add 2 teaspoons ground cinnamon)

Whisk the vanilla homogenised cheese and eggs together until combined. Add the sifted flour, baking powder and salt. Mix thoroughly with a fork until a smooth batter forms.

In a wide, shallow saucepan, heat the oil to 175°C. Using a small spoon, carefully drop spoonfuls of batter into the hot oil. Dip the spoon into the oil occasionally to prevent the batter from sticking. Fry the doughnuts until golden brown on all sides. Transfer the cooked doughnuts onto kitchen paper to drain excess oil.

While still warm, roll them in the cinnamon sugar mixture until evenly coated.
