
The series of pistachio treats with crispy kataifi pastry wouldn’t be complete without this pistachio and strawberry dessert :). I simply layered everything you love into glasses and added fresh, juicy strawberries. The result is a viral Dubai-inspired dessert inspired by the famous Dubai chocolate bar. And with strawberries, as you can probably guess, everything tastes a hundred times better. This dessert requires no baking, and you can make it even easier by using pre-toasted kataifi pastry.
Makes 4 large servings or 8 smaller portions.
Ingredients for the pistachio kataifi filling:
- 45 g butter
- 200 g kataifi pastry
- 400 g pistachio cream
- 40 g tahini
- a pinch of salt
Melt the butter in a frying pan. Cut the kataifi pastry into small pieces, add it to the butter and cook, separating the strands as you go, until crisp and golden brown. Remove from the heat and leave to cool. If you can buy ready-toasted kataifi pastry, you can skip this step.
Place the toasted kataifi into a bowl. Add the pistachio cream (if it’s too firm, warm the jar briefly in hot water and stir), tahini and salt. Gently mix until combined. You can add a little more pistachio cream if you prefer a softer, looser filling.
Ingredients for the chocolate ganache:
- 110 ml double cream
- 135 g milk chocolate, finely chopped
- 50 g dark chocolate (50–70% cocoa), finely chopped
Heat the cream in a small saucepan until just below boiling. Remove from the heat, add the chopped chocolate and leave for 2 minutes.Stir until smooth and glossy. If necessary, strain through a sieve to ensure the ganache is perfectly smooth. Leave to cool slightly.
Additionally:
- 800 g strawberries
- chopped pistachios, for sprinkling
Hull the strawberries and cut them into halves or quarters if large.
Assembly:
Layer the ingredients in dessert glasses or serving cups, repeating as many times as your glasses allow: strawberries, pistachio kataifi filling, chocolate ganache. Finish by sprinkling with chopped pistachios.
