Smarties cookies

These Smarties cookies are perfect for birthday parties – not just for kids! Deliciously crisp, colourful, and filled with everyone’s favourite chocolate sweets, they’re guaranteed to be a hit. Whether you call them Smarties or chocolate lentils – you know exactly what we mean!

Makes 14 cookies.

Ingredients for Smarties cookies:

  • 100 g butter
  • 70 g light brown sugar
  • 1 tablespoon golden syrup or honey*
  • 150 g plain flour
  • 1 teaspoon baking powder
  • 85 g Smarties (or similar chocolate sweets)

All ingredients should be at room temperature.

Cream the butter and sugar until light and fluffy. Add the golden syrup and mix well. Add the flour and baking powder and mix until combined. If the dough feels too dry, add up to 2 teaspoons of water. Fold in the Smarties, mixing just until combined.

Shape the dough into 14 balls and place them on a baking tray lined with baking paper, leaving plenty of space between them. Do not flatten.

Bake at 180°C for 11 – 12 minutes. The longer they bake, the firmer they will become, so avoid overbaking. Let them rest briefly after baking (they will be very soft), then transfer to a wire rack to cool.

*Alternatively, you can use 1 teaspoon vanilla extract instead of syrup or honey. Keep in mind that syrup or honey will make the cookies slightly firmer, similar to gingerbread.

Enjoy!
