Golden cinnamon cookies are perfect for this time of the year and full of flavour. They are named after the main ingredient – golden syrup, they taste of caramel and cinnamon… Perfect autumn cookies.
Yield: 30 cookies.
Ingredients for the golden cinnamon cookies:
- 60 g butter
- 115 g golden syrup
- 2 Tbs brown sugar
- 1 Tbs caster sugar or icing sugar
- 185 g plain flour
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- 3 tsp ground cinnamon
Combine butter, golden syrup and sugars in a medium saucepan. Stir over low heat until butter is melted; cool for 5 minutes. Stir in flour and cinnamon.
Roll rounded teaspoons of mixture into balls. Place about 2 cm apart on baking trays lined with baking paper. Gently flatten with a floured fork until l cm thick. Bake for about 12 minutes or until browned. Wait a while before lifting onto wire racks to cool.
Bake at 220ºC for about 10 minutes or until browned. Wait a while before transferring onto the wire rack to cool.
