Baked peaches with meringue topping

A quick, sweet and delicious dessert! Fresh peaches, lightly sweetened and dusted with cinnamon, baked under the grill with a fluffy meringue topping. Baked peaches with meringue require very little effort but look wonderfully impressive ;).

Makes 8.

Ingredients for the baked peaches:

  • 4 large ripe peaches
  • brown sugar, honey or golden syrup, for sweetening
  • ground cinnamon, for dusting

Ingredients for the meringue:

  • 2 egg whites, from large eggs (80 g)
  • a pinch of salt
  • 100 g caster sugar

Stone the peaches, cut them in half and place them on a baking tray, cut-side up. Lightly sweeten and dust with cinnamon. Bake at 200°C for about 13 minutes, or until tender. While the peaches are baking, prepare the meringue.

Whisk the egg whites with a pinch of salt until stiff. Gradually add the sugar, one spoonful at a time, whisking well after each addition. You should have a thick, glossy meringue. Remove the baked peaches from the oven and use a large spoon to top each peach half with the meringue.

Preheat the grill. Grill for about 2 minutes, keeping a close eye on the meringue at all times. If it starts to brown too much, remove from the oven immediately. Serve straight away.
