Chocolate apple cake

Soft, moist, and wonderfully rich — and above all… chocolatey :). This chocolate apple cake is simple to make, yet packed with flavor: chocolate, apples, almonds, rum, and cinnamon — it simply had to taste amazing! After the first bite, we all agreed that we absolutely have to make it again with pears, it’s that good :).

Ingredients for the chocolate apple cake:

  • 4 apples (about 700 g)
  • 2 tablespoons lemon juice
  • 3 tablespoons dark rum (or orange juice for a child-friendly version)
  • 2 tablespoons raisins
  • 200 g butter
  • 170 g caster sugar
  • 4 large eggs
  • 200 g plain flour
  • 125 g ground almonds
  • 2 tablespoons cocoa powder
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

All ingredients should be at room temperature. Sift together the flour, baking powder, cocoa powder, and cinnamon. Set aside. Peel the apples, remove the cores, and cut into small cubes. Mix with the raisins, lemon juice, and rum. Leave at room temperature for 1 hour.

In the bowl of a stand mixer, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the sifted dry ingredients and ground almonds, folding gently with a spatula just until combined. Do not overmix. Add the prepared apples and stir gently.

Line a 25 cm cake tin with baking paper. Transfer the batter into the tin and smooth the surface.

Bake at 170°C for about 45 – 50 minutes or until a skewer inserted into the center comes out clean. Remove from the oven and cool completely. Pour over the thickening chocolate glaze.

Ingredients for the chocolate glaze:

  • 80 g dark chocolate
  • 80 ml double cream

Heat the cream in a small saucepan until almost boiling. Remove from the heat and pour over the chopped chocolate. Leave for 2 minutes, then stir until smooth and glossy.
