
Chokeberries are considered a true superfood, and the list of nutrients they contain – as well as their beneficial effects on the body – is very long. Whenever I manage to buy chokeberries, I usually turn them into homemade jams combined with other fruits (for example chokeberry and raspberry jam), although until now I rarely used them in baking. It’s time to introduce you to a delicious recipe for apple and chokeberry muffins. I’m sure you’ll enjoy this flavour combination.
Makes 12 muffins.
Ingredients for the apple and chokeberry muffins:
- 125 g butter
- 125 ml milk
- 1 teaspoon vanilla extract
- 150 g caster sugar
- 2 large eggs
- 300 g plain flour
- 2 teaspoons baking powder
- 300 g chokeberries
- 1 large apple, peeled and diced
All ingredients should be at room temperature.
Melt the butter and allow it to cool slightly. Pour it into a large bowl and mix with the milk, vanilla extract, sugar and eggs. Simply whisk until combined – the mixture should not be whipped. Add the sifted flour and baking powder and mix with a whisk or spatula just until combined. Add the chokeberries and diced apple and fold gently to distribute the fruit evenly.
Line a 12-hole muffin tin with paper cases and fill them to about ¾ full with the batter.
Bake at 160°C for about 30 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow the muffins to cool on a wire rack. If you like, dust them lightly with icing sugar before serving.
