A delicious dessert for anyone who loves rice pudding. Made with roasted nuts, raisins and, of course, chocolate. Perfect for afternoon tea or a late Sunday brunch. Highly recommended!

Ingredients for chocolate risotto (2 servings):

  • 600 ml milk
  • 30 g sugar (or more, to taste)
  • 50 g butter
  • 125 g rice (Arborio or Carnaroli)
  • 50 g hazelnuts, chopped and roasted
  • 50 g raisins
  • 125 g dark chocolate, grated
  • brandy, optional

Melt the butter in a large saucepan, then add the rice, sugar and some of the milk. Cook until most of the milk has been absorbed, then add more milk and continue cooking until all the milk has been used. The rice should be delicately al dente in a creamy milk sauce.

Add the nuts and raisins and mix well. Stir in some of the grated chocolate, mixing only briefly to keep a marbled effect. Garnish with chocolate chips. If you like, add a splash of brandy before serving.

Serve immediately.
