
This easy summer fruit cake is wonderfully simple, yet impressive from the very first bite. Soft, fragrant with fruit and beautifully golden after baking – simply delicious. You can make it with any of your favourite fruits. Everyone in our house loved it, and even now, just thinking about it makes us lick our lips!
Ingredients for an easy summer fruit cake:
- 120 g butter
- 130 g caster sugar
- 3 large eggs
- a pinch of salt
- 140 g plain flour
- 1½ tsp baking powder
- about 400 g fruit of your choice, e.g. peaches, plums, blueberries or blackberries
All the ingredients should be at room temperature.
Place the butter, sugar and salt in the bowl of a stand mixer. Beat until light and very fluffy. Add the eggs, one at a time, beating well after each addition until fully incorporated. Sift the flour and baking powder directly into the mixture and gently fold in with a spatula.
Pour the batter into a 22 cm round cake tin lined with baking paper. Arrange the fruit on top, cutting larger pieces into smaller chunks first.
Bake at 180°C for about 40 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool. Dust with extra icing sugar before serving, if desired.
