
A wonderfully refreshing summer drink – best gooseberry lemonade, flavoured with lemon and fresh mint. This gooseberry lemonade is perfectly sweet and tangy, making it ideal for cooling down on hot days. It is best prepared the evening before a heatwave is expected. And do not forget a generous supply of ice cubes ;).
Ingredients for the gooseberry lemonade:
- 500 g gooseberries
- 1 litre water
- ¾ cup sugar
- freshly squeezed juice of 1 lemon
- 2 small sprigs of mint
Place the gooseberries, water, sugar and mint sprigs into a saucepan. Bring to the boil and simmer for 2 minutes. Leave to cool completely. Once cooled, press the mixture through a sieve. Add the lemon juice and stir well.
Pour into a jug and chill for at least 3 hours, preferably overnight.
Before serving, taste and, if needed, add a little extra water to dilute slightly. Serve with plenty of ice and lemon slices.
